For the external input, what cautionary steps should I take to avoid hurting the SID’s? Can I plug a raw guitar into it or does it need to be a ‘balanced’ input? Can I plug another synth in? A microphone?

Well, filtered the external balanced output of my Boss ME-50 guitar pedal. Sounded cool.
Just check the SID datasheet about the voltage level it expects on the Ext. In and make sure you stay below that
